Can't I just cook the eggs to kill the bacteria?

Yes. "Eggs if fully cooked don't pose a threat. But the problem is a lot of people like to eat their eggs sunny side up or make hollandaise sauce," LeJeune said. "We want to reduce the threat as much as possible."

I wonder how many people really make Hollandaise Sauce. How many of you even know HOW to make it?

The bottom line is that fully cooked eggs are no risk BUT, as the person in the article said, is it worth the risk?

"Carrier" hens do not always lay an "infected" egg.

Note that mayonaisse is NOT mentioned as a risk. This is because it is made with vinegar or lemon juice. The acid in those ingredients kills the bacteria.

I do on special occasions. It is a PITA but well worth it.

I guess the best thing to do is buy locally-produced eggs. Oddly enough you can get them at Costco.

That makes two that know how... Any more? Where can you buy a double boiler these days? Since the inception of small crock pots they are not needed to melt chocolate and the like.

I haven't made it in a while, but I never used a double boiler to make Hollandaise. I found that having a gas stove/oven really eliminated the need for one as the pan is not sitting directly on theheat source. But I do know that sometimes a double boiler is still needed. I would use a pan just a bit larger for the water. Took a little effort, but it worked. Hmm, I wonder if I can get a double boiler from Amazon...can find most everything else there.

You can't call yourself a cook until you can make Hollandaise. It really isn't that hard, and it is one of the mother sauces.

I noticed that when the recall first started, they were showing a US map indicating the distribution of the tainted eggs. As the recall expended, it seems that map is no longer available.

That makes me a bit nervous. Don't underestimate the influence of Big Egg.
